I have a confession to make. I'm a Diet Coach foodie right here, hates cooking. Yup, that’s me. The whole process stresses me out. I suppose if I was a good cook I might like it more. I grew up in an Italian family, cooking and eating was a big deal. My mother and grandmother cooked all the time and couldn’t wait to hear my feedback on the delicacies they created. Of course I loved everything they made…. except my grandmothers ambrosia which was quite the odd mixture of ingredients. Nonetheless, I managed to eat platefuls of whatever they made as a kid, but never managed to make a meal myself. My friend jokes, you grew up with 2 Italian women and have no idea how to cook?

Certainly I have muddled my way through over the years, but I have never found a way to make the gourmet meals my tastebuds would prefer. I cook simply and similarly live simply. There is nothing wrong with simple cooking. It goes hand in hand with the fast food life I have.  Now I am not saying I eat fast food, and rarely do I ever eat processed food. What I am saying is that I have a fast paced life and choose not to spend hours cooking one meal.  I am a huge fan of cooking in bulk, if cooking is something you also hate to do, why not get it over in one shot. Spend a day cooking for the week. Figure out your meals and snacks and pack in baggies or tupperware containers. 

I love the crockpot! Put in some beef or chicken, cut up some veggies, throw in some spices, and vegetable broth, and VOILA, you come home to a freshly cooked homemade meal rather than having to slave over a hot stove for hours. The air fryer or the nuwave oven also saves a lot of time.
